Believe it or not Fall is right around the corner. The ninety-degree temperatures will be gone and the kids will be back in school. The pools are empty and the traffic on the roads is full again. The nights are getting shorter and cooler. Our free-time in the summer months will give way to a more predictable schedule in the fall. The beginning of the school year is a good time to regroup and get back on the healthy lifestyle train.

Roasting vegetables can be as easy as placing cut up vegetables on a flat tray and adding some salt and olive oil. Turn the over to 325 and let roast for 30-40 minutes.
